{Cheese Dip} Yummy!

Several weeks ago I went to a baby shower and this wonderful dip was served…..I had to have the recipe!

Once I got the recipe—I’ve wanted to just keep it in the fridge at all times; but realized that is really dangerous.  When it is in there:  I eat it.  {Notice I did not say:  “I share it”.  Because I don’t.}

It is super quick and easy—and keeps great for several days in the fridge if needed. {The problem is, it won’t last several days–you’ll eat it.  So, make  it right before you need it, just to be safe.}  You’d hate to be the gal that was supposed to bring an appetizer–and when you arrive with just a couple of scrapings left on the bottom of the bowl that you tried to smear around to look plentiful – everyone gives you weird looks.

CHEESE DIP:

16 oz. shredded sharp cheddar cheese

whole green pepper – finely chopped {I actually used the small can of green chiles to give it a kick—both are good, though.}

1/4 cup onion, finely chopped

1 c. mayonnaise

Stir ingredients together and chill in the refrigerator overnight.  Serve with crackers. {Or pretzels, or pita chips, or your fingers–they all work very well.}

I think that is the smallest amount of recipe directions I have ever written.  Wow!
